Fried Kuey Teow

Yes hi there!
I wanted to share with all of you my all time favorite dish.
TADAAA..
Fried Kuey Teow... drools.
I am obsessed with kuey teow. I could devour the whole menu that include kuey teow in it.
Kuey teow ladna, kuey teow hailam, kuey teow soup, kuey teow bandung.....and many many more.
Only GOD knows why.
I felt as if the gravy absorb better with kuey teow noddles. Oh so delicious.
Yes believe me its much better. But some prefer yellow noddles over kuey teow which is not a suprise considering the texture and elasticity of yellow noddles is much more than kuey teow.

FRIED KUEY TEOW

here's the recipe for it:

Serves : 4-6

Ingredients :

1kg kuey teow (washed & drained)
500g cockles (boiled & shells removed)
2 tablespoons vegetables oil (for sauteing)
2 eggs
50g beansprouts
50g mustard greens / sawi (shredded)
5 tablespoons sweet soya sauce
2 tablespoons oyster sauce
4 tablespoons chilli paste
2 red chillies (sliced)
30g spring onions (shredded)
a little water
Salt to taste

Ground ingredients :

3 shallots
5 cloves garlic
2cm piece dried shrimp paste

  1. Heat the oil and stir-fry the ground ingredients till the aroma rises. Add in the oyster sauce, chilli paste, cockles and eggs.
  2. Stir in a little water and let it boil.
  3. Add in salt, mustard greens, kuey teow , soya sauce and bean sprouts. Fry till the mustard greens are tender.
  4. Dish up, then garnish with spring onions and chillies.
  5. ITS TIME TO EATTT! yummeh!
